What makes fudge fudgy?

I love my chocolate fudge recipe, not to sweet, and VERY fudgy you know smooth, not quite creamy, but also not hard. And most importantly to me, not 'chalky' or grainy.

Peanut butter fudge on the other hand I have a problem with, I have tried several recipes tweaking away, yet I cannot come up with one that isn't grainy. And frequently they are more sweet than peanutbuttery. Don't get me wrong I like sugar loaded peanut butter as much as the next person, but I would prefer a proper 'fudgy' peanut butter fudge' so what is the sercret, what makes fudge fudgy?

See this is why I rarely keep spending logs, they are usually boringly empty.

Though tomorrow I expect a jump, we are going grocery shopping early, since we don't want to do it the day after Christmas.

    The secret is not letting sugar crystals form (thus, the grainy/harder chocolate).

    Haven't tried this recipe, but I have been watching too much Alton Brown. So I now know more about making candy/fudge than a non-cook should. Actually, it's kind of interesting.

    I have a great simple fudge recipe that is merely powdered sugar, chocolate, milk and butter. A bit of vanilla for taste. Best fudge recipe if you ask me, but problem is it is a little too soft. But something like that with peanut butter may also work.

    Oh - too funny. I assumed the only one on the website was the one I saw. The link above looks like my simple microwave fudge recipe. (I'd go for the simple).

    But I think this is the one I Was thinking of... What the recipe doesn't say is if you let it cook too long, sugar crystals form and ruin the fudge!

    I have used the fantasy fudge recipe with marshmallow creme and substituted peanut butter chips for the chocolate chips and it was delish! Same with the mix of peanut butter/choc. chips!

    As kdmoffett25 mentioned, it MARSHMALLOW WHIP or CREAM that makes it fudge the right way.

    Well take one was praised by most, including my husband who is either not fond of my baking or too spoiled to comment usually.

    BUT I don't like it enough...needs more cream, peanutbutter flavor, and less crystals. I shall try again, but not today, today is Peanut butter cookies

    I make microwave peanut butter fidge- with cake icing. Its very creamy.
