Recipe search failure

April 29th, 2006 at 02:57 pm

I have spent the morning looking for a universal muffin recipe, with no success, they all call for whole wheat or bran, which I have none.... So I am left with no recipe and I am supposed to make muffins for church tomorrow.

There's a universal recipe in one of the Tightwad Gazette books--this isn't verbatim, it's the way I have it on a recipe card....

2 to 2-1/2 cups dry ingredients (flour and up to 1 cup other grain)
1 cup milk (or fruit juice for part)
1/4 cup oil (omit if using a wet addition)
    1 egg
2 tablespoons to 1/2 cup sugar (or 3/4 cup brown sugar)
1 teaspoon baking powder (if using a whole grain, increase to 3 teaspoons)
    1/2 teaspoon salt
Flavorings, such as cinnamon, if desired

    Additions (up to 1-1/2 cups)

    Dry - nuts, seeds, coconut
Moist - berries, apple, zucchini, carrot
Wet - pumpkin, applesauce, mashed banana (If using more than 1 cup wet additions, decrease milk/juice to 1/2 cup)

    Hope this helps.

I LOVE this recipe....I make muffins all the time, always different, always good.

It's 20 minutes at preheated 400 degress, BTW.
