The chicken was GOOD!

Last night we had my mother and father in law over to celebrate Christmas..I made BBQ chicken, and it was good! I actually liked it, I usually complain that the chicken is too dry...and I usually ruin some part of it anyway. Though no one else complains the way I do when I cook! Thankfully they have manners.

This time I loved the chicken, not to dry, not to overpowering BBQ either. The only trouble, out of 8 pieces of chicken, the one I served my mother in law was still pink in the middle! ACK. The rest were done, this s why I hate cooking bone in chicken unless it is a roast...the pieces are never uniform in size so you either dry out the little ones or don't cook the big ones, or just plain ruin them all!

Fortunalty it was just the one piece.

    i usually boil the chicken first in some onions, garlic, S&P, then throw it on the grill and sauce it up... always cooked completely and always moist. it's cheating but hey

    I put the bigger peices in the oven about 15 minutes before the smaller ones. That helps keep the cooking even.

    err, I cooked it in my cast iron pan..on the stove top, oven was full...some oil..then wash chicken dump in, coat with BBQ from store..turn and wait..cut open to peek if pink Smile
    No secret. Though to do all 8 I had two pans going at once. I tried to move the little ones when done to the one pan to keep em warm but not cooking too much, while I waited on the big ones...but one big one didn't work..If I were smart I would have put the big ones in first, then the little a few minutes later..and I really have no idea how long I cooked it for, prolly at least 20 minutes, cause I made biscuits in the meantime.

    Haha, that made me laugh. Is it sad that the first thing I thought of was, "onions, garlic, Standard & Poor's index"? It took me a moment to realize what you really meant.

    As for the grill, ahhhh... the grill. Does it even matter if someone wants to call it cheating? I mean, it's the grill! The best cooking device ever invented by man. (I'm pretty sure it's gotta be a guy who invented that one. Big Grin)

    It's just too bad that I currently don't have a grill, but more importantly, find it too much of a hassle to deal with on a regular basis. Otherwise, seriously, some of the best cooking I've ever tasted was off of a grill (not cooked by me).

    I've tried to cook BBQ chicken in a crockpot before, but it has yet to come out right. I AM having chicken soup tonight though. Mmmmm... I just had a hankering for it with the cold weather lately.

    Anyways, I'm rambling now. Big Grin Oh yeah, and someday, I need to look into cast-iron cookware and possibly using the stove too. Whew!

    The good thing about the grill is that if something goes wrong you can blame it on the GUY who cooked it and we look patient and long suffering!!
